A higher dry matter content, a reduced humidity level, allowing for all the aromatic precision of my harvest. It is from my beginnings on the beaches of Sainte Anne (Guadeloupe). The weight of a pod does not determine its quality. You weigh as a professional a water content. At our level, in the importation of vanilla, after years in the industry, here are the most important points: - Vanillin content (main molecule for purely vanilla notes) - Associated aromatic amplitude On this batch: Main Notes: Vanilla, Red Fruits (Raspberries, Currants), Forest Fruits (Blackberries, Blueberries) Heart Notes: Slightly woody, Very candied. - Harvest period - Aging of the batch, respect for the specifications specific to each importer (here, long traditional aging as in the past). - Nutrients from the soil from which the pods come, indigenous terroir, type of cultivation (shade, agroforestry, intensive...) - Final result in the creations of our chef and individual clients.
