Take 1 kg of extraction vanilla (Papua extraction type or Bourbon Gold aged) and the same quality in development at 35% humidity (which is 50% fewer pods per kg but much larger because more humid). Ask your client for the best. The preference will always go for the extraction vanilla not yet fully aged. Should I sell a more humid vanilla to my clients, highlight a softer price per kg and offer it as black vanilla? Of course not. It is difficult to explain that a well-humid and large vanilla is not necessarily a guarantee of quality. Too often, vanillas sold as black vanillas are vanillas that lack aging with a humidity rate that decreases in a few days. Currently, the kg of vanilla is negotiated around $600-700.
