There are different varieties of vanilla with a more or less dry texture; the same goes for the humidity level. You need to choose your vanilla based on what you want to make. It's not the appearance that determines the quality of the vanilla. Regarding Bourbon vanilla, the Red variety often has higher vanillin content than that of a Black Gold Bourbon vanilla, which is fattier!

Hello Ludovic. You have chosen different varieties of vanilla with a more or less dry texture, a more or less high humidity level.... All of this is well mentioned in the product sheet.
