Ask your client for the best. The preference will always go for the extraction vanilla not yet fully aged. Should I sell a more humid vanilla to my clients, highlight a softer price per kg and offer it as black vanilla? Of course not. It is difficult to explain that a well-humid and large vanilla is not necessarily a guarantee of quality.
