I bought a shoulder that was very good, but when buying the ham of the same brand, the latter came quite raw. I understand it can be complicated to see, but in this case the ham was ordered boneless and the person who will debone it should have noticed that the curing of this ham was not correct. I bought this ham "la union 1890" from acorn-fed. The ham is good within its limitations. I thought that a ham costing more than 100€ would have a different type of quality and more from the Jabugo area. It is an Iberian ham but a bit dry, without the fat and softness desired in a pata negra ham. Next time I want an authentic pata negra ham, without having the claws painted black.
