All our truffles are rigorously selected and sorted by hand, one by one, in our workshops. Each piece is checked to ensure its freshness and quality at the time of shipment. However, as truffles are a natural and living product, their aromatic intensity can vary depending on their ripeness, origin, and also the storage conditions after receipt.

However, we want to assure you of one essential point: our white truffles from Alba are never frozen. They are exclusively marketed fresh, whole, and prepared with the utmost respect for the product. Freezing would immediately alter their aromatic qualities and does not correspond in any way to our methods of work.

The white truffle from Alba is an extremely delicate product, whose aromatic intensity can vary according to its natural maturity, its harvest stage, and the storage conditions after receipt. A rapid loss of aroma can occur if it is not consumed or stored under optimal conditions.
