I find it a little disappointing for a company such as LAGUIOLE HONORÉ DURANT, not to have a well-made knife for everyday use for a price of around 130 euros (I bought a knife with a slight defect, a poorly-fitting bolster and a few traces of dirt on the handle), which begs the question: what's the point of buying a knife from certain professional cutlers when a chinoiserie can do the job for everyday use? I'm not a knife collector, I own a few dozen knives, I like a job well done, I have a few knives by Jean Michel CAYRON (Damascus blade), DOMINIQUE BIONDI etc ... Sincerely, M LIGORI
