I have been ordering from the site davidvanille.com for some time now. I specifically order vanilla and I am very satisfied with it, I use it for my pastries but especially when I have to make a large quantity of Punch (for big meals) I add it to my recipe to give a little extra flavor. My last order was this month (February 2023) for a large reception (our wedding in July), for storage I followed the advice David gave me vacuum-sealed and in the freezer. I recommend the closed pods from this site even these spices. As for me, I will remain loyal to my purchases of vanilla sticks.

As a reminder: The weight of a pod does not determine its quality at all. You weigh as a professional a water content. At our level, in the importation of vanilla, after years in the industry, here are the most important points: - Vanillin content (main molecule for purely vanilla notes) - Associated aromatic amplitude On this batch: Main Notes: Vanilla, Red Fruits (Raspberries, Currants), Forest Fruits (Blackberries, Blueberries) Heart Notes: Slightly woody, Very candied. - Harvest period - Lot aging, respect for the specifications specific to each importer (here, long traditional aging as in the past). - Nutrients from the soil from which the pods originate, indigenous terroir, type of cultivation (shade, agroforestry, intensive...) - Final result in the creations of our chef and individual clients. Finally, the vanilla that the industry buys to create vanilla extract is only split or unsplit extraction vanilla. Like us, it focuses on the quality of the batch and not on the visual.
