Exceptional service, and I mean my words.
The Pompona Schiede vanilla from Guadeloupe is a true diamond. As you may have seen, its aromatic profile is miles away from what we know. Know that just one cm worked at low temperature is enough to flavor an entire recipe.
It is also possible to make an alcohol with just one cm of Pompona vanilla in a relatively neutral alcohol base like rum or vodka to develop all its notes and use it economically.
This is a quality that is disappearing, keep it precious 😉

A very expensive price-to-quantity ratio compared to the experience I had at the market in Saint François in Guadeloupe

In 2013, the price per kilo was around 53 euros. Five years later, you need to count more than 650 euros for a Bourbon Gold vanilla from Madagascar. Other countries have followed suit and it is very difficult to find vanilla. Currently, there is a significant crisis in the market.
