The cheese has a less pronounced sheep taste than I thought (although it is very good). I must say I am left wanting more, as I love cheeses like Beaufort d'alpage and Etivaz which is only from alpine pastures where the flora in its milk is more perceptible.

Response from Maison Agour
Mr. Baralo,
Thank you for your feedback regarding our Ossau-Iraty AOP .
We understand that the sheep taste seemed less pronounced than you expected, despite your positive appreciation of the product.
The aromatic profile of our cheeses can indeed vary depending on the aging and characteristics of the milk, with more or less marked expressions. The alpine cheeses you mention offer different typicities, linked in particular to their environment and the richness of the flora.
We hope to have the pleasure of providing you with complete satisfaction during your next tasting.
Best regards,
Maison Agour Etxea

Hello; I received your products but due to health issues I couldn't start tasting them! Tonight I will start! Anyway, I know your products so I have no doubt about their quality. PS; I saw that you sell BAILLET ham from Hagetmau; do you happen to make blood sausage; it's just a question!! Best wishes, sincerely ..

I was very skeptical when buying this Iraty Ossau old guard cheese because I am used to finding gems of this cheese in the Ossau valley in artisanal cheese shops. What a surprise it was to discover the extraordinary flavors of this cheese. Strong in taste as I like it and yet tender and not dry. A very balanced salting. BRAVO to the whole team for this success. Plus, a very pleasant customer service following a delivery problem that was resolved immediately, not to mention the kindness and simplicity of the person I spoke to online. In summary, 1 without fault.

The cheese arrived well, it is too good. I know Basque cheese well because I lived not far away. It is a real pleasure to eat it, to the point that my grandchildren and I almost ate all 500 grams, so I will reorder, but this time 1 kg. Oh yes, yes, too good, I recommend it 100%.
