However, we want to assure you of one essential point: our white truffles from Alba are never frozen. They are exclusively marketed fresh, whole, and prepared with the utmost respect for the product. Freezing would immediately alter their aromatic qualities and does not correspond in any way to our methods of work.

The white truffle from Alba is an extremely delicate product, whose aromatic intensity can vary according to its natural maturity, its harvest stage, and the storage conditions after receipt. A rapid loss of aroma can occur if it is not consumed or stored under optimal conditions.

However, we would like to clarify that our truffles are harvested, prepared, and shipped every day. They are offered fresh, whole, and unprocessed, in the strictest respect for the product. A sensation of dryness can sometimes be related to the natural stage of ripeness of the truffle, some being naturally firmer depending on the harvest period and climatic conditions.

It is also important to remember that the external appearance of a truffle alone does not allow one to judge its freshness. Since the truffle is a living product, variations can exist from one specimen to another.

Indeed, canned truffles are a product that requires very special attention, whether in terms of the proportion used in a dish or its cooking. A minimum of 10-15g of canned truffle per person is required, and a minimum of 10% for a preparation (butter, sauce, etc.). Hello, can you please tell me how many people you used this jar for? I see that you bought a 15g jar and a 30g jar of extra brushed truffles. For information, we recommend 15g for a dish for 1 person maximum, as the heat treatment (appertization) will have annihilated the truffle's aromas, so it's all the more important to respect this weight. We regret that your experience with this product did not live up to your expectations. If you like black truffles, you're probably used to eating them fresh. However, this product is appertized, having undergone two heat treatments in order to preserve the truffles for several years. These truffles are therefore cooked, with organoleptic qualities quite different from those of fresh truffles. You'll also have noticed that their appearance is very different from that of fresh truffles: the flesh of appertized truffles is black, with no marbling. This appertization also affects the smell: when opened, there is generally little or no smell, which is normal. Similarly, we tend to consume truffle-derived products that are flavored (oils, salts, etc.); as such, they will be much stronger in taste than the raw truffle, which remains subtle and light on the palate. It's also important to point out that this is a product that needs to be worked on: the smell and taste of these canned truffles develop when they come into contact with heat, or when they are infused in a fatty substance (butter or cheese, for example), hence the need to add them to a hot dish at the last moment, just before serving, or to let them infuse in the fatty substance for 24 to 48 hours before eating. They should never be added at the beginning or in the middle of cooking, for example, as this will destroy all their flavor.
