An interesting and fairly comprehensive book for getting started with food smoking. Ideas, recipes and tips. I would have appreciated a development on salting with the balance method that I use for salmon, but this would be an accessory chapter that is perhaps the subject of another volume. Nevertheless, I recommend this purchase, which, like many tompress products, satisfies me.
