I bought a cast-iron and stainless steel manual tomato and fruit press to handle my chestnut purée and avoid last year's major peeling problem. A few adjustments later, and after realizing the need to protect my work surface as the pulp can fly off in all directions, and using the round end of my rolling pin to tuck in the chestnuts, I decided to go for it.

I would have appreciated a development on salting with the balance method that I use for salmon, but this would be an accessory chapter that is perhaps the subject of another volume.
