First try, duck breast and filet mignon. Wet weather on lighting, couldn't resist a nap of more than an hour. Then ok but how do you control the temperature and, is it normal that it's not completely sealed on the top.

Hello, you can indeed dry the sawdust to avoid this inconvenience. You can use a dial or probe thermometer to measure the temperature in the smoker.
