Quality of the blade spring. The quality of the spring that holds the blade open is inferior to that of my previously purchased Laguiole Durant knives. As a result, the pressure of the blade in the open position is soft, and the blade does not spring back strongly when the blade is opened even slightly – let's say an angular opening of one to two millimeters and even a little more.
Perfect work: I just received my traditional Laguiole with corkscrew in less than 4 days.
The finish is perfect, not the slightest defect or trace. The wood of the handle (juniper) is a very beautiful wood.
The sharpening of the 14C28 stainless steel blade is much more resistant than the 12C27 stainless steel.

Very good idea: This is the 5th Layole knife kit I've ordered. Very good quality. You have to be a bit manual to assemble it but nothing insurmountable either, a short half-day with a few tools and you have YOUR knife. Very good value for money.
