Tomme de brebis cheese, a delight; Bayonne ham, the smell and the true taste of Bayonne that I used to eat in the Basque Country; the Basque cake with black cherries, very good but I have a preference for the Basque cake with cream (that will be the subject of a new order in some time)

Satisfied with my purchase, the cheese is excellent, however it seems to store poorly because after a week in the fridge, the Grand Affinage cheese completely molded with orange color everywhere and lots of mold, so I am very disappointed with that one. I also took a 6-month aged cheese which I still have and it is perfect. So it remains a very positive note but surely a storage problem maybe during transport?

However, we are sorry to learn of your disappointment regarding the Grand Affinage cheese. The storage of Basque cheeses can indeed vary depending on their type. Pressed cheeses, like our Ossau-Iraty or tommettes, are generally more stable over time. Conversely, some more delicate cheeses may have a shorter shelf life and evolve more quickly, especially on the surface.
In any case, we recommend storing the cheeses in their original paper, specially designed to allow them to breathe, and placing them in the refrigerator. This helps to best preserve their taste qualities and natural evolution.
In case of specific damage upon opening the package (breakage, omission, or deterioration of the product), the sender and/or recipient has a period of 7 working days from the date of receipt of their shipment or collection at the pickup point, to contact our after-sales service.
The complaint must be accompanied by visuals of the packaging and products attesting to the situation.
After reviewing the complaint by our quality service, the after-sales service will proceed according to the customer's wish, either by creating a credit note or by resending the damaged goods.

Regarding storage, it can indeed vary depending on the type of cheese. Some cheeses, which are more delicate, require special attention to best preserve their qualities. We recommend keeping them in their original paper, in the refrigerator, to allow the cheese to breathe properly.
