We used the smoker to smoke salmon, but it is preferable to use the cold smoke accessory to avoid cooking (provided the lid fits over the drawer). However, you'll need to drill a hole in the smoker and close the entrance to the sawdust tray. Electric resistance will be welcome to keep the sawdust burning.
